This shiitake/rash issue is worth looking into. A well known rule of thumb is that mushrooms of all kinds should always be cooked and not eaten fresh. Nevertheless, the article makes the statement that " lentinan, breaks down with heat." I'm no M.D., but this strikes me as questionable because lentinan is widely acknowledged to be one of the pharmacologically active components of shiitake that is responsible for at least some of its various health benefits. Cooked shiitake has been consumed for a very long time in China and other Asian counties in order to obtain those health benefits. It just doesn't' make sense that cooked shiitake would confer those benefits if cooking causes shiitake to break down. None the less, they taught me in "scientist school" to be skeptical, not certain about claims like this. I'll see if I can find someone with appropriate expertise to weigh in on this issue. Does anyone else on this list have an informed opinion on the "lentinin breaks down with heat" issue, or know someone who might shed some light on this?
